FAHEETAS!

I used to love the show Friends. Still do, actually. If I’m flicking through the channels and catch a rerun on cable I usually stop and watch, and it always makes me giggle.

There was an episode in one of the last two seasons in which Joey and Rachel were attempting to date, and had just told Ross. There was a scene where Ross made dinner, had too much to drink, and he was yelling about the food – “My FAHEETAS!”

Okay, so I’m not so much the story teller. But that shit was funny. Also the reason they are now and forever pronounced FAHEETAS! in my house.

ANYWAY.

I made chicken FAHEETAS! for a co-worker this week. He and his family are going through a tough time right now, so people at work are taking turns making a nightly meal for them. I didn’t want to make the usual lasagna or casserole, and I thought FAHEETAS! would be a nice change. I mean, who doesn’t love FAHEETAS! ? I know I do. They’re super simple to make, not to mention delicious. Here’s how I make my FAHEETAS!

Ingredients:

1lb boneless skinless chicken breasts, sliced into thin strips

3 or 4 green bell peppers, depending on size, sliced into thin strips

1 large onion, quartered and thinly sliced (sensing a pattern?)

2 cloves of garlic, finely diced

Goya Sofrito seasoning (preferably the one found in the freezer section, but the jarred stuff is OK)

Ground cumin

salt and pepper

Additional Accoutrement:

Tortillas

Shredded Cheese

Sour Cream

Pico de Gallo (recipe follows)

Anything else (guac, salsa, etc) is optional, I prefer to keep my FAHEETAS! on the simple side, but your house, your rules. Do what you want, I won’t judge.

This is a fairly straightforward recipe, since most of the work is done before you actually cook.

Have I ever mentioned how much I love bell peppers? I do. Every time I cook with them, I end up eating at least a half of one before I’m done. And the big, sweet red bell peppers? Dude. I could them shits like apples.

Heat a large pan on medium high heat. Add 2 TB olive oil and the chicken strips. Season with salt and pepper. Saute until cooked through and browned, about 10 minutes. Add approx. 2 TB of Sofrito (we ‘Ricans swear by that shit, it’s the bomb. Sabor!) and 1/2 tsp of ground cumin. Toss to combine and cook just a minute or so longer. Remove from pan and set aside.

Try (unsuccessfully) not to snack.

Add 2 TB more olive oil to the pan, then onions and peppers. Toss for a couple minutes then add garlic. Continue cooking vegetables until the peppers have softened a bit and the onions are slightly translucent – vegetables should still have a little crunch to them. Add 1 Tb of Sofrito and toss to combine.

I threw the chicken back in after the veggies were done to keep everything warm, but I didn’t combine them. I segregate my meats and veggies, as a matter of personal preference.

While the veggies are cooking, heat up the tortillas in a pan on medium heat (no oil or cooking spray needed) one at a time, until each tortilla is heated through and slightly browned. Keep warm tortillas in a clean (and I mean clean. Like straight out the dryer clean.) kitchen towel until ready to serve.

That would be my kitchen towel. These tortillas were kind of small, but that just means more FAHEETAS! to eat.

You can either add the chicken back to the pan at this point and mix everything all together, or serve the chicken and the vegetables separately so people can have more or less veggies or more or less chicken as they prefer. I’m a ‘more veggies’ kind of girl myself, so I always serve them separate. What’s one more dish to clean up, in the grand scheme of things?

Serve with cheese, sour cream, and the awesome homemade pico de gallo you just made. Make appropriate yummy noises as needed.

Pico De Gallo (you so don’t need pictures of this)
Ingredients:

Two medium tomatoes

1/2 red onion

1-2 jalapeno peppers, depending on amount of spice you like(don’t be a pussy) – remove seeds and ribs.

1Tb fresh cilantro

Juice of 1/2 lime

Finely dice tomato, onion, and jalapeno and toss in a bowl. Chop cilantro finely and add to tomato mixture. Toss with lime juice and a little bit of salt and fresh ground pepper. Add to your FAHEETAS! as desired, or serve with chips, or on grilled chicken, or just bathe in the shit. I don’t judge.

Oh, side note: be sure to wash your hands and keep them AWAY from your eyes (ProTip: Take out your contacts BEFORE you make dinner) after you’ve handled those jalapenos, because FUCK ME that shit burns.
